Located in Warsaw’s leafy neighborhood of Żoliborz, POLOT redefines the typical, staid Polish restaurant with its own colorful broad-brush of youthful energy and modernity.  This venue, transformed from of an old car-wash into an inspirational culinary venue, is reflective of its name. The Polish word “polot” implies a wellspring of gusto, and this is what this restaurant possesses much of. This is evident in the modern interpretations within Chef Filip Kosin’s menu, where he amalgamates traditions with new twists to produce his dynamic arrangements.  And the restaurant’s interior — its palette of colors, blends of different furniture, old photographs juxtaposed within new frames– makes this an apt setting for these new, updated flavors of modern Polish cuisine.
