The name ‘Kawaleria’ translates to Cavalry; the imagery of charging horses and nobility bridging perfectly with her commitment to serve a quality of cuisine once reserved for the elites. It’s about authentic recipes, finest country-raised ingredients, and elaborate cooking techniques; an outstanding example is the wild boar in red wine, served with barley risotto, boletus mushrooms and salads!
